1 large (30 oz) can apricot halves, drained with juice reserved
1 large (6 oz) package orange jello
6 oz. frozen orange juice concentrate, thawed
1 Tbl. lemon juice
1 C 7-Up
6-8 purple lettuce leaves to serve on

Directions:
Directions:
In small saucepan, bring 1 1/2 C of reserved apricot juice to a boil over medium heat. Remove from heat and add orange jello and stir until dissolved; set aside. In a blender, process apricot halves, OJ concentrate, and lemon juice until smooth. Add jello mixture and 7-Up and mix well. Pour into a greased 8x8 inch dish. Chill until firm. Cut salad in squares and place on lettuce leaves.
