1/4 C packed brown sugar
1/2 tsp. vanilla
1 1/2 C cream or half and half
2 Tbl. brown sugar, for the caramelized tops

Directions:
Directions:
Place a shallow baking pan on the middle rack of the oven. In a medium bowl, lightly whisk eggs with 1/4 C brown sugar and vanilla. Gradually stir in cream or half and half; pour into 2 custard cups or ramekins. Place ramekins on baking pan and pour enough water into pan to come halfway up the ramekins. Bake at 325 for about 45 minutes or until set around the edges but still soft in the center. Remove cups from pan. Chill for at least 2 hours or up to 2 days.
When ready to serve, press about 2 Tbl. of brown sugar through a strainer and sprinkle over tops of creme brulee. Place ramekins until broiler on middle-top rack until sugar melts; watch carefully to prevent scorching. Chill for at least a few minutes before serving for sugar to become crisp. Serve within two hours of broiling.
