2 C flour
1/2 tsp salt
4 eggs, lightly beaten
2 C milk
1 Tbl. butter, melted

Directions:
Directions:
Sift together flour and salt; set aside. Place eggs, milk, and butter in blender and blend briefly. Add dry ingredients and blend until smooth. Pour into 12 well-greased muffin cups. Bake at 400 for 20-25 minutes, until popovers raise high and are lightly browned. Serve hot with butter and jam. May be cooled, frozen and reheated later at 350 for 5 -10 minutes.
