Beef Gumbo Recipe

2 1/2 to 3 lbs cubed beef
1 1/2 onion
1 1/2 large carrots chopped
1/2 red and 1/2 green pepper chopped
3 cloves garlic minced
2 stalks celery chopped
1 c red roux
1 large can crushed tomatoes
1 pk frozen okra or fresh okra
1/4 t garlic powder
1 T beau monde or celery salt
salt and pepper
red pepper to taste
beef stock (see recipe)

Saute cubed beef and onions til beef is browned and onion is soft. Put beef stock into pot with carrots, celery and onion and seasonings.Bring to a boil and add roux a T at a time stirring to mix til roux is all added. Add tomatoes, meat and okra. Cook for 20 to 30 minutes and correct seasonings.
Serve over rice.
