9" pie shell, baked and cooled
1 qt. strawberries
1/3 c. powdered sugar
3/4 c. sugar
3 tbsp. corn starch
juice of 1 lemon
water
1 tsp. red food coloring

Directions:
Directions:
Wash and hull strawberries. Select 3/4 quart of the choicest berries and place in a bag with powdered sugar. Put in pie shell. Mash the remaining berries, gradually stir in sugar, corn starch, lemon juice, and enough water to make 1 1/2 cups of berries and juice. Add food coloring. Cook over moderate heat until mixture thickens and boils. Cool and pour over berries in pie shell. Chill about 2 hours. Remove from fridge about 20 minutes before serving. Add whipped cream.
