3 eggs
2 cups sugar
3/4 cup vegetable oil
2 cups flour
1/2 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
3 teaspoons cinnamon
3 teaspoons vanilla
2 cups grated zucchini (unpeeled)
1 cup walnuts, chopped

Directions:
Directions:
Beat eggs well. Add sugar, oil, flour, baking powder, baking soda, salt, cinnamon and vanilla. Mix well. Fold in zucchini and walnuts. Pour into two well-greased and floured loaf pans or 1 bundt pan. Bake at 350║for 45-55 minutes or until done.

In July 2007, while preparing for Rene and Lynn Olson's wedding, the "girls" stayed at Rene's parent's cabin on Lake Alexander in Cushing, MN. and were served this delightful zucchini bread.
