3/4 c. sugar
2 large eggs
1/4 c. water
1/3 c. vegetable oil
1 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. cinnamon
1/4 tsp. nutmeg
1 c. grated carrots

Directions:
Directions:
Combine all ingredients in a 2 quart mixing bowl ***by hand. Spread batter in greased 2-3 1/2 quart slow cooker. Cover and cook on low heat for 2 hours, or until firm in the center. You can lightly jiggle the covered cooker to check firmness.
Top with cream cheese frosting

This is the easiest carrot cake I've ever made and it comes out very moist. Bart was extremely skeptical when he saw me make this but was nicely surprised it turned out so well. **Note you must mix ingredients by hand for this to work.
