Pork Tenderloin with Garlic Mustard Sauce Recipe

2 cloves garlic, minced

1/2c. onion, chopped

1 1/4lb. pork tenderloin

Salt and pepper

1T. flour

1T. butter

1T. olive oil

3/4c. chicken stock

1T. Dijon mustard

2T. fresh parsley, chopped

Directions:
Directions:
Cut pork into 8 diagonal slices.

Sprinkle meat with salt and pepper and coat lightly with flour.

Heat butter and oil in a large frying pan over medium-high heat.

Add pork and cook until browned, about 3 minutes on each side.

Remove pork and cover to keep warm.

Add garlic and onion to pan and stir over medium heat 1 minute.

Add stock, and bring to a boil, stirring up browned bits from bottom of pan.

Stir in mustard and 1T. parsley.

Pour over meat and sprinkle with remaining parsley.
