2 eggs - beaten
1 cup vegetable oil
2 cups sugar
2 tsp. vanilla extract
2 cups of grated Zucchini
2 cups of Flour - sifted
1 tsp. salt
1/2 tsp. baking powder
1 tsp. cinnamon
1 tsp. baking soda
1/2 cup finely chopped walnuts

Directions:
Directions:
Preheat oven 325 degrees. Grease 2- 4x8 in. loaf pans.
Beat eggs, oil,sugar and vanilla in a large bowl with mixer on medium speed until foamy.
Add zucchini to egg mixture. Combine flour, salt, baking powder, soda, and cinnamon in a separate bowl. Gradually add flour mixture into zucchinis mixture beating continually until mixed well together. Stir in chopped nuts.
Bake loaves for about 1 hour or until golden brown.
