5 eggs, 1/2 C Brown Sugar
12 oz semisweet chocolate bits, 1/2 c water
OR
(1/4 c water, 1 tsp. vanilla, 1/4 cup flavoured liquer)

Directions:
Directions:
1) Separate egg whites and egg yolks
2) Melt Choc.
3) Add liquids to yolks
4) Add Choc. to liquids; Let cool apprx. 3-5 min. and whisk to an even consistency
5) Beat egg whites to a glossy consistency
6) Add Brown Sugar to egg whites and beat into smooth consistency
7) Fold*** choc. mixture slowly into egg white mixture
8) Chill approx. 6-8 hours


***Folding: While holding bowl at slight angle towards yourself, fold the mixtures together with a circular scraping motion with a spatula, "folding" a ribbon of the mixture on top of itself. Try to avoid mixing air pockets into mousse. Repeat slowly until both mixtures are combined in an air free, smooth consistency mixture
