Ingredients:  
1/2 medium cauliflower, chopped
1/2 lb fresh spinach
1/2 lb fresh sliced mushrooms
1/2 c pine nuts - bake 7 minutes at 350 degrees
1 firm ripe avocado

Dressing:
6 T olive oil
3 T white vinegar
1 garlic clove finely minced
1/2 tsp dry mustard
1/2 tsp basil
1/4 tsp pepper
Dash of nutmeg

Directions:
Directions:
Mix cauliflower, spinach, mushrooms and pine nuts in salad bowl. Combine dressing ingredients together. Mix well. Drizzle dressing on veggies and nuts; mix well. Slice avocado and gently mix in. Serve immediately.

This is a wonderful salad but does not keep due to the avocados.
