2 15 oz cans black beans rinsed and drained 1 17 oz can whole kernel corn 2 chopped tomatoes 1 chopped avocado 1 chopped red or purple onion 1/4 cup chopped fresh cilantro 4 tbsp lime juice 2 tbsp olive oil 1 tbsp red wine vinegar 1 tsp salt 1/2 tsp pepper
Combine all ingredients and refrigerate overnight. Serve with tortilla chips or scoops.
