3/4 cup light mayo
1/4 cup fat-free plain yogurt
1 T lime juice
3/4 tsp curry powder
1/4 tsp salt, or to taste
White pepper to taste
3 cups pulled cooked chicken (1 1/4 lb. uncooked boneless chicken)
2/3 cup chopped celery
3 T sliced green onions or red onion chopped finely
1/2 medium-large apple, cored and cut into little pieces
2/3 cup sweetened dried cranberries
1/2 cup toasted pecans, chopped

Directions:
Directions:
Combine the mayo, yogurt, lime juice, curry, salt, pepper in a bowl and mix well. Add the chicken, celery and green onions and toss well. Chill, covered for up to 24 hours. Add the apple, dried cranberries and pecans within 4 hours of serving and toss well. Chill until ready to serve.
