1 1/2 cups small shrimp
1/2 cup finely chopped celery
3 Tbsp fresh lemon juice
2 Tbsp. white-wine vinegar
1tsp. prepared horseradish
1/2 tsp. freshly ground pepper, plus more, if needed
1/2 tsp. salt, plus more if needed
1 envelope unflavored gelatin
1/4 cup cold water
1/2 cup heavy cream
1 cup mayonnaise
cucumber slices
avocado slices

Directions:
Directions:
Combine small shrimp, celery, lemon juice, vinegar, horseradish, pepper and salt. Marinate for 30 min. Soften gelatin in cold water and carefully dissolve over low heat. In a large bowl, whip the cream until stiff. Add the mayonnaise, gelatin, shrimp and their marinade, and adjust the seasonings. Pour mixture into an 8 inch ring mold or fish mold that has been oil or has been rinsed in cold water, stir occasionally until it starts to set, chill the mousse 4-5 hours or overnight. Unmold onto a chilled serving platter. Garnish with cucumber and avocado slices, serve with fancy crackers.
