4-6 medium sized avocados
1 small red onion
1 red pepper
salt and pepper to taste
jalapeņos (optional)
2-3 limes or lemons

Directions:
Directions:
Slice avocados in half and take out seed. Scoop out into a bowl. Mash them up really good. (I use a potato masher.) If you want to get down and dirty use your hands. Chop onion, red pepper and jalapeņos. Add as much or as little to your liking. Add salt and pepper to taste. Squeeze in one lime or lemon in at a time and taste. This prevents the guacamole from turning brown as fast.

Store in air tight container and refrigerate. Best if you serve within a couple hours of making.

When buying avocados you want them somewhat soft to the touch but not mushy. They must be ripe to make guacamole. If they are rock hard they need to ripen for a few days.
