1 T. oil
1 (14 to 16 oz.) pkg. chicken breast strips for stir fry
2 3/4 c. water
1 (1oz.) pkg. stir fry seasoning
1/3 c. creamy peanut butter
1 (14oz.) fancy mixed chinese vegetables, drained
2 c. frozen bell pepper and onion stir fry, thawed and patted dry
2 c. white rice
1/4 c. chopped peanuts

Directions:
Directions:
In a skillet heat oil over medium heat. Add chicken; cook and stir 5 to 6 minutesor until no longer pink. Reduce heat stir in 3/4 c water, stir-fry seasoning mix and peanut butter until smooth. Stir in vegetables and bell pepper and onion stir-fry; cook and stir until thoroughly heated. Meanwhile cook rice in reamining 2 cups of water. Serve mixture over rice and sprinkle with peanuts before serving.
