3/4 peck banana peppers
1/4 peck hot peppers
3 cans black olives
8 large carrots
1 bunch celery
2 heads of garlic
2 qt vinegar
2 qt. water
1 1/4 c. canning salt
1/3 c. oregano

Directions:
Directions:
Cut all vegetables to uniform size. Put all ingredients in crock or large stockpot overnight.

Drain-pack in jars, cover with a vegetable or canola oil. (not olive oil) Seal the jars by cold packing. Cook in boiling open canner for 5 minutes to seal.

The first time I made this recipe, I burnt my hands on the hot peppers, ended up in the Emergency Room. I recommend wearing gloves.
