1 lg butternut squash, peeled, seeds removed and cut into small chunks

4-5 celery stalks, cleaned & chunked

1 T minced or 1-2 cloves peeled garlic

salt & pepper to taste

2 bay leaves

chicken or vegetable broth to cover

Directions:
Directions:
Place all veggies & spices in pot. Cover with chicken broth. Bring to a boil, then reduce heat and simmer until very tender. Blend with imulsion blender until smooth. Serve hot with dollop of sour cream or swirl of seasoned olive oil. Serve with hot French bread. Enjoy!
