3 eggs
2 c sugar
1 c olive oil
2 c grated zucchini
2 1/2 whole wheat or white flour
1/4 tsp baking powder
1 T soda
1 c chopped nuts

Directions:
Directions:
Beat eggs and sugar together well. Add oil, zucchini and vanilla. Stir dry goods together and fold into above. Stir in nuts. You may want to line loaf pans (bottom only) with wax paper. Also spray well with Pam or equivalent. Bake at 350 for one hour. Can bake in small loaf pans for 30 minutes or baby muffin tins for 16 to 18 minutes. Baked product stores well in freezer.
