3/4 tsp Salt for boiling water (Eggs)
9 Eggs, whole, one end pricked; cook 3 min. in fast boiling salted water. Pull off heat, leave eggs in hot pan. Let eggs rest 20 minutes in pan. Rinse in cool water. Peel, chop finely, set aside

3/4 tsp Salt for boiling water (Potatoes)
12 cups (5#) Potatoes, Cut in 2"-cubes, peel on or off. Rinse until water runs clear. Barely cover in salted water, Boil until fork tender, Drain promptly, do not rinse. Remove from hot pan, set aside

9 Tblsp Onion, Finely chopped (Purple or green onion preferred)

3-3/4 cups (1 bunch) Celery, Slice thinly, dice finely across grain

Mix Together
1-1/2 tsp Parsley Flakes, dried, crushed in palm
1-1/2 tsp Dry Mustard Powder
3/4 tsp Black Pepper
3/8 tsp Basil Leaves, dried, crush in palm
3/8 tsp Paprika
1-1/2 tsp Salt
9 tsp Prepared Mustard, yellow or brown
4-1/2 Tblsp Cider Vinegar
9 Tblsp Pickle Relish, Can mix sweet & dill
1-1/2 cups Hellman's Mayonnaise

Cook Eggs & chop as directed. Cook Potatoes as directed, let cool. Chop vegetables as directed (no food processors). Mix seasonings together in large bowl. Combine dressing with onion & celery in large bowl. Add Potatoes, mix lightly. Add Chopped Eggs, mix lightly. Sprinkle with Paprika & cover tightly. Chill at least 6 hours, preferably overnight.

This is a recipe Mother had multiple portion sizes marked on her card. 8-12-16-24-32....all measured out ahead of time. No waste allowed!

Mother never allowed food processors to do salads...she insisted "they make a mush of things, and I don't like it."...so....we chopped it by hand.
(I don't like mushy potato salad either).
