2 - 4 ounces smoked salmon*
1 8-ounce package cream cheese (low-fat Neufchatel works very well)
2 green onions, green and white parts, chopped into inch-long sections
Dash or two of Tabasco sauce, to taste
1 roasted red pepper (from can or jar), optional
1-2 tablespoons low-fat mayonnaise, optional

Directions:
Directions:
Place all ingredients in a food processor and blend until almost smooth. If you have a mini-processor, you may need to make two batches. Refrigerate until needed and serve with crackers or toast rounds. The dip makes an excellent sandwich spread as well. It will keep at least one week in the refrigerator and is a good addition to a party table.
