Ingredients: 1/2 lb. lean ground beef or shredded chicken or pork 1 c. sugar 3 T. soy sauce 1/2 c. white vinegar 1/2 c. ketchup 4 T. cornstarch 1 c. cold water 8 oz. can crushed pineapple (optional) Cooked rice (amount can vary according to how much you like)

Directions: |
Directions:Cook meat so it is in small pieces and set aside. In sauce pan or large frying pan combine sugar, soy sauce, vinegar and ketchup. Bring to a boil over medium heat. If using crushed pineapple, drain the juice into two cup measuring cup. Add enough cold water to make one cup total liquid. If not using pineapple, just put one cup of cold water into two cup measuring cup. Stir corn starch into liquid until dissolved. Pour into other sauce mixture and cook until thick, stirring constantly. When mixture has thickened add meat and stir well. If using pineapple stir in to mix just before serving (or it will get way too hot). Serve over cooked rice. (If you start cooking the rice just before you start making the sauce it should be ready at just about the same time.) |

Notes: This is Emma Leigh's favorite meal. This sauce can also be made without the meat and/or pineapple and used as a dipping sauce for egg rolls, etc.
