4 medium potatoes peeled and cubed. You can use any kind of potato you like, sweet, white or red.
1 Tbl vegetable oil
3 Tbl prated Parmesan cheese
2 Tbl chopped parsley
1 teas paprika
1/2 teas garlic powder
1 teas salt
1/8 teas cayenne pepper

Pre–heat oven to 450 degrees. Line a baking sheet with foil and spray with vegetable cooking spray. Place potatoes in a medium bowl and toss with vegetable oil. In a small bowl combine Parmesan cheese, parsley, paprika, garlic powder, salt, and cayenne pepper. Add Parmesan mixture to potatoes. Toss to coat evenly with cheese mixture. Arrange potatoes on prepared baking sheet. Bake for 25 to 30 minutes, turning once, until potatoes are lightly golden and are tender when poked with knife. Left over potatoes can be warmed the next morning and served with eggs, for breakfast.
