1 1/2 T finely chopped white onion
1 T + 2 tsp finely chopped fresh cilantro
1 1/4 tsp finely chopped, seeded jalapeno
1/2 tsp coarse salt, plus more for seasoning if desired
1 ripe Hass avocado, pitted, peeled, & coarsely chopped
3 T finely chopped seeded tomato
1 T freshly squeezed lemon (1/2 lemon)

Directions:
Directions:
With a large mortar and pestle, mash onion, 1 T cilantro, jalapeno, and salt until smooth & juicy. Add avocado, and mash slightly (avocado should remain somewhat chunky). Stir in tomato & remaining 2 tsp cilantro. Season with salt if desired. Serve immediately.
