3 eggs (may need 4)
bacon 3 strips
chop all the following:
each ingredient is about 1/4 cup
onion
mushrooms
carrots
celery
red peppers
grated cheese

Directions:
Directions:
Bill puts all the chopped vegetables and bacon in a fry pan and cook till bacon is done, and vegetables tender. Remove from pan.
Whisk the eggs and cook the eggs till set on one side then flip and put on the vegetables, bacon, and cheese. Fold over the omelet and remove to plate and top with fresh sliced tomatoes.
