1 qt. whole milk
1/2 t. salt
1/3 c. white rice, heaping (long grain)
1/2 c. sugar
1 T. butter
2 eggs, beaten
1/2 t. nutmeg

Directions:
Directions:
Combine milk, salt and rice in top pan of a double boiler with 1" of water in the bottom. Bring water to a boil and reduce heat to a simmer. Cover and cook for 1 hour.

Add sugar and butter. Cook 10 more minutes. Remove from heat.

Mix 3 T. of pudding to eggs to temper. Stir eggs into pudding, add nutmeg and cook 5 more minutes.

Pudding thickens as it cools.
