2 c. of pot cheese or farmer cheese
1/4 c. softened butter
2 egg yolks
1/4 c. sugar
1/4 c. chopped blanched almonds (optional)
1 tsp. lemon rind
1/4 c. of seedless baking raisins (optional, but I prefer to add them)
2 egg whites

Directions:
Directions:
Force cheese through a food strainer. Beat egg yolks with sugar and creamed butter. Add rest of ingredients and fold in beaten egg whites last. Then fill your kolacky dough and bake.
