Fresh horseradish root washed and peeled
White vinegar
Kosher salt

Directions:
Pick the smallest roots you can find at your local farmers market, or grow your own in the garden. Itís easy to grow, but make sure if you do plant it, that you do so in a pot placed in the ground to prevent the root form taking over. This plant spreads very easy and will get out of control if you donít restrict the room it has to grow. Slice the root into small chunks and then grind in a blender. Add vinegar to the blender and continue to blend. Add salt to taste. The amount of vinegar and salt you add will depend on the amount of roots you have. Put the horseradish in small jars and make sure you keep it in the refrigerator. Last for about 6 months.
