Peeled and boiled sweet potatoes or yams, cooled then sliced
1/2 cup butter
1/2 to 1 cup brown sugar
1 tsp vanilla
3/4 cup cream

Directions:
Directions:
Melt butter in sauce pan, add brown sugar. Cook, stirring until all the sugar crystals melt. Stir in cream, and cook until you have a creamy caramel sauce. Add vanilla. Lay slices of potatoes or yams. Heat your potatoes in the sauce for at least another 20 minutes, you want the potatoes to absorb some of the caramel. (Sauce will thin when you add the potatoes, so donít be concerned.)

This year at Thanksgiving, we put the potatoes in the oven after we put them in the sauce. We also had some of the glaze for the orange rolls left and placed that on top. The potatoes really absorbed the flavors of the caramel and the slight orange flavor from the glaze. Wonderful!
