1 tbsp. Olive Oil
1 med. onion-chopped
2 cloves garlic-minced
coarse salt and ground pepper
2 tbsp. tomato paste
1 lb. collard greens-stalks removed, chopped
1/2 tsp. dried thyme
1/4 tsp. red-pepper flakes
2 (19 oz) cans white beans, rinsed and drained
1 (14.5 oz) can diced tomatoes in juice
Parmesan, for serving

In a large sauce pan, heat oil over medium heat, add onion and garlic, season with salt and pepper. Cook until onions soften, add tomato past and cook until onions are coated, about 30 seconds. Add collard greens, thyme and red-pepper flakes. Cook until collard greens start to wilt - 2-4minutes. Place 1/4 of beans in a bowl and mash with back of spoon (this will help in thickening soup.) Add all of the beans (mashed and whole) to mixture as well as tomatoes with juice and four cups of water. Bring to a boil, reduce hear, cover and simmer until collard greens are tender - about 10-15 minutes. Season with salt and pepper, serve with grated parmesan - if desired.
