Ingredients: 5 tbsp. veg. oil 3 lb. ground beef chuck 3 lg. yellow onions 8 cloves garlic, minced 1 jalapeņo, seeded and chopped 1/2 cup chili powder 2 Tbsp ground cumin 1 Tbsp ground oregano 2 tsp ground coriander 12 oz. lager beer 2 1/2 cups beef stock or broth 1 28 oz. can crushed tomatoes 1 15 oz. can kidney beans (rinsed and drained) 1 15 oz. can pinto beans (rinsed and drained) 3 Tbsp masa harina

Directions:In large frying pan brown 1/2 the beef in 1 Tbsp oil. Drain in colander. Repeat with the other half of the beef.Drain and set aside. In large pot saute onions and garlic. Add jalapeņo, chili powder, cumin, oregano, and coriander. Stir until well combined and cook for 1 minute longer. Add the beef, the beer and the stock and bring to simmer. Reduce heat to medium-low, cover and simmer, stirring occasionally, for 50 minutes. Add kidney beans, pinto beans and masa harina and simmer, uncovered, for 5-10 minutes more, until it thickens a bit. Serve in large bowls. |

Notes: Serve with shredded cheese of your choice, sour cream and great bread. Add hot sauce as desired. A great dish for a cold winter day. Gets even better the next day when reheated.
