2 tbsps. butter
2 tbsps. extra virgin olive oil
1/2 cup sliced scallions
3 garlic cloves (crushed)
2 cups fresh tomatoes
1/2 cup dry sherry
1 tbsp. tomato paste
1 tbsp. oregano
1 tsp. sugar
1/2 tsp. crushed red pepper
1 lb. fresh shrimp
1 1/2 cups feta cheese

Heat butter and oil in medium skillet. Add onions and garlic, saute over medium heat until golden. Stir in tomatoes, sherry, tomato paste, oregano, sugar, and red pepper flakes. Bring to a boil and add shrimp.

Reduce heat and simmer for six minutes until shrimp are pink. Stir in feta, heat until cheese begins to melt.

Serve over pasta of your choice.
