1 c instant oats, 1 c milk, 1 c flour, 1/3 c sugar
3 tsp Baking powder, 1/2 tsp salt, 1 egg, 1/4 c oil

Directions:
Directions:
In small bowl mix oats and milk. soak 15 min. Sift flour, sugar, baking powder and salt into 2 qt bowl. Add egg & oil to oatmeal mix. Add all at once to dry sifted ingred. & stir to moisten. Preheat oven to 425. Fill muffin tins 2/3 full. Bake for 20 to 25 mins.

I substitute vanilla soy milk, it only makes it healthier, doesn't affect the flavor at all. Maybe even makes them a little lighter! I also use canola
oil, a soy base. Yum !
