"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
1 cup White Lily all purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp kosher salt
1/4 tsp ground cayenne pepper
2 tablespoons cold, unsalted butter
1/2 cup grated sharp cheddar cheese
1/2 cup buttermilk

Directions:
Directions:
Preheat oven to 425.
In a large bowl, blend the flour, baking powder, soda, salt, and pepper. Cut the butter into small chunks. Using your fingers, lightly rub the flour and butter together until the mixture is meal-like.
Add the cheese and mix. Pour the buttermilk into the center and mix until the flour mixture is just moistened. You may have to dust with a little flour so the dough can be patted into a ball.
Turn the dough out onto a lightly floured surface. Roll
the dough out to about 1/4 inch thick. Cut out with a biscuit or cookie cutter, roll leftover pieces and cut again until all dough is used.
Place the biscuits on an ungreased cookie sheet and bake 15 minutes until the bottoms are crusted and tops are just turning a golden brown. Serve warm.
