12 medium potatoes
6 T butter or margarine
2 1/4 c. grated cheddar cheese
2 eggs,beaten
1 1/4 c. milk
3/4 to 1 tsp. salt
Directions:
Directions:
Peel potatoes;cook until tender. Drain and mash
thoroughly. Add butter, cheese, milk, and salt; beat
over low heat until butter and cheese are melted.
Fold in eggs and pour into greased 13x9x2 inch pan
or dish. If not baking right away, refrigerate. Bake
in moderate oven - 350 degrees for 30 to 45 minutes
until puffy and golden brown.
