4 c. cube zucchini, do not peel, cook & drain
1 1/2 c. soft bread crumbs (2 slices)
1 lg chopped onion
6 tbsp. butter
1 c. Cheddar cheese
1 tsp. salt
3 eggs
1/8 tsp. pepper

Directions:
Directions:
Melt 1/2 of butter and saute onions. Stir onions into zuc­chini. Add cheese, salt and pepper. Add eggs, beaten and stir all together. Put into casserole dish and top with
buttered bread crumbs. Bake at 350° for 35 to 45 minutes or until nicely brown.
