Sliced sweet onions or Vidalia (enough to fill a large skillet)
3/4 stick butter or margarine
1 tsp. brown sugar
1 tsp. tomato paste
2 T. flour
2 cans beef broth
1 can beef consommé
1/2 c. sweet wine
homemade croutons
cheese of choice, mozzarella, Swiss or provolone

Directions:
Directions:
Add the onions to the melted butter in a large skillet and cook until the onions are cooked down and golden brown. Stir in brown sugar and tomato paste until mixed then add flour and stir until flour is cooked in. Add broth slowly, stirring constantly to mix the flour into the broth and add consommé.

Let this mixture simmer for about 20 to 30 minutes until it starts to cook down and thicken. Add 1/2 c. of a sweet wine and simmer a few more minutes.

Spray oven safe bowls with Pam, add soup to bowl, top with croutons and cheese (you can also sprinkle the top with Parmesan cheese. Put the bowls on a sturdy pan to be used in the oven. Bake on broil with the oven door open and watch because it will cook fast. You only want to melt the cheese.

This is great to cook outside if you have a side burner because it keeps the onion odor outdoors.

Also, don't waste the tomato paste that's left. It can be dropped by teaspoonful onto foil and frozen flat in the freezer until frozen and then wrap and use as needed in other recipes.
