8 bacon strips, diced
3 c cubed peeled potatoes
1 can chicken broth
1 small carrot, grated
1/2 c chopped onions
1 tbl. dried parsley flakes
1/2 teas each celery seed, salt & pepper
3 tbl flour
3 c milk
8 oz process American cheese, cubed
2 green onions, thinly sliced

Directions:
In a large saucepan, cook bacon until crisp; drain. Add potatoes, broth, carrot, onion, parsley, celery seed, salt & pepper. Cover and simmer, until potatoes are tender, 15 min. Combine flour and milk until smooth; add to soup. Bring to a boil; boil and stir for 2 min. Add cheese stir till melted, and soup is heated through. Garnish with green onions.
