3 large green tomatoes 1 tsp. salt 3/4 c. unsifted self rising flour 1/4 tsp. pepper vegetable oil for frying
Cut tomatoes into 3/8 inch slices. Mix salt and pepper into flour. Coat slices with mixture and let set for 15 minutes. In a large iron skillet heat 1/2 inches of oil. Lightly dredge tomatoes again in flour mixture. Brown on boths sides (about 3 mins. total). Serve hot.
