1 lb. ground beef
1 onion, chopped
1/2 bell pepper, chopped
1 to 10 hot peppers (to taste), chopped
1 c. mozerella cheese
1 c. cheddar cheese
2 c. corn meal
1 c. milk
3 eggs
1/2 c. bacon grease
1 can whole corn (drained)

Directions:
Preheat oven to 350. Grease iron skillet liberally so it won't stick and set aside. Brown beef, onion, bell pepper, hot peppers and set aside. Mix meal, milk, eggs, bacon grease and corn. Pour half of meal mixture into greased skillet. Put beef mixture in center of meal, add 2 c. of cheese over beef mixture-do not let the beef or cheese touch sides of skillet as it will stick. Pour remaining meal mixture on top. Cover the beef and cheese well. Bake 45 minutes or until crust is brown.
