2 lbs. Asparagus (40 spears)
1 lb. thin Sliced Prosciutto
Extra Virgin Olive Oil
3/4 cup grated Parmigiano Reggiano Cheese
Salt
Pepper

Directions:
Directions:
Preheat oven to 400º. Blanch asparagus by plunging into large pot of boiling water for 3 minutes until crisp yet tender. Stop cooking by transferring asparagus into bowl of ice water. Drain and let dry. Wrap each asparagus spear diagonally with a strip of prosciutto. Place on baking sheet drizzled with olive oil. Season with salt and pepper and sprinkle Parmigiano Reggiano Cheese on top. Place in the oven an bake until golden brown and sizzling - about 10 minutes. Serve immediately.
