1 small Chopped onion
1/2 cup chopped celery
1 Tbl Butter

2 cans chicken broth
2 large heads of broccoli or cauliflower
Salt and Pepper to taste
2 cloves of garlic

2 cups Milk or cream
1 cup grated cheddar cheese

Directions:
Directions:
Put onion and celery in saucepan with butter and Sauté until clear and soft.
Add chicken broth, broccoli, salt and pepper and garlic to pan, and cook until soft. Blend soup stock in blender until smooth. Return to pot. Heat milk in a separate pan with a tablespoon of Corn Starch that was mixed with a little of the soup stock before you blended it. Do not boil. Add hot milk to the soup stock and heat. Add cheese and stir to melt.

This is good with either broccoli or cauliflower. We really enjoy it in the winter for a fast, healthy (well sort of with all the cheese) dinner. It's very filling, all you need is some good French bread or fry bread.
