4 c. whole milk
1/2 c. medium grain rice
pinch salt
1 vanilla bean split or 1 1/2 tsp vanilla
2 eggs yolks
1/3 c. sugar

Directions:
Directions:
Add milk, rice, salt and split vanilla bean into medium sauce pan. Bring to boil over high heat, stir occassionally. Reduce to low heat and over and simmer, stirring occassionaly for 15 minutes. Uncover and cointue to simmer and stir frequently, until rice is tender and reduced to 3 1/2 c. about 8 minutes.

In medium boil wishk egg yolks, sugar and vanilla extract (if using). Slowly add some of the cooked rice mixture to the egg yolks, whisking constantly. Then pour back into all the cooked rice and led cook until thickened about 1 minute.

Serve warm.
