"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

2 c all purpose flour
1 tsp salt
2/3 c plus 2 tbsp shortening
4 to 5 tbsp cold water

Filling:
1/2 lb ground beef
1 c diced baking potato
1/4 c diced onion
salt
pepper
basil

Directions:
Directions:
Pre-heat oven to 400. Measure flour and salt into bowl. Cut in shortening thoroughly. Sprinkle in water, 1 tablespoon at a time, mixing until all flour is moistened and dough almost cleans side of bowl (1 or 2 teaspoons of water can be added if needed). Gather dough into 3 balls and set aside.
In a separate bowl mix ground beef, potatoes and onions. Salt, pepper and basil to taste.
With a rolling pin, shape balls of dough into flattened ovals on lightly floured surface. Put 1/3 of the filling on the half of the crust closest to you about 1 in. from the edge. Fold the other half of the crust over the filling so the edges meet. Roll the excess dough towards the middle. Press firmly around rolled edges with the tines of a fork.
Bake on a cookie sheet at 400 for 15 minutes then lower the temperature to 375 for 45 minutes.
