2 lbs. fresh raw peanuts in shell 5 tbsp. salt, or to taste
Wash peanuts well. Place them in large boiler. Cover peanuts with water; add salt. Cover and cook on high heat to a rolling boil. Reduce heat to medium. Add water as needed to keep peanuts under water. Boil for 3 to 4 hours until done. Boiled peanuts should be soft, not hard. Drain and cool. Keep refrigerated.
