Cajun Spice
Lemon (1/2 a lemon per fillet
Louisiana Red Hot Sauce

Directions:
Directions:
Prepare grill with the coals and mesquite wood for direct cooking. Cover both sides of fish with spice and lemon juice. Grill on foil till flakey and golden brown, turn once, and serve with a lemon wedge and hot sauce.
