3 cups shredded zucchini, including skin
1 cup Bisquick
3/4 to 1 cup grated Parmesan cheese
2 tbsps. chopped parsley
1/2 tsp. salt
1 tsp. pepper
1/2 cup vegetable oil
3 eggs

Directions:

Mix all ingredients together and pour into greased 9 X 12 baking pan. Bake for 25 minutes at 350 degrees.
