4 1 1/2 inch thick filet mignon steaks
Fresh ground pepper
2 tsps. fresh or dried rosemary

Balsamic Vinegar Pan Sauce
4 teaspoons minced garlic
1/2 cup dry vermouth or sherry
1/2 cup beef broth
4 tsps. soy sauce
2 tbsps. balsamic vinegar
2 tbsps. butter
Fresh ground pepper
olive oil

Directions:

Sprinkle meat with ground pepper and rosemary. In a medium to heavy skillet, heat a small amount of olive oil over medium high heat. Put in steaks and fry them for 4 to 5 minutes per side for medium rare. Remove and cover loosely while you prepare sauce.

To make sauce, pour off all but 2 tbsps. of fat leaving any meat juices in pan. Reduce heat to medium and saute garlic for 15 seconds, stirring. Add the vermouth or sherry and scrape up any browned bits from the bottom of the pan. Raise the heat to high and reduce liquid to syrup. Pour in the beef broth, soy sauce and vinegar. Boil until the sauces reduces to a syrup. Remove from heat and stir in butter. Taste for salt and pepper. Pour over steaks and serve.
