4 chicken breast (1-1/2 lbs)
2 T. flour
1/4 tsp. salt & pepper
2 T. extra virgin olive oil
1-3 bell peppers (red & green)
1 lg. red onion
2 cloves garlic - minced
1 c. chicken broth
2 T. Dijon mustard
1 T. honey
2 T. lemon juice
2 tsp. corn starch

Directions:
Directions:
Cut chicken into bite size pieces. Mix flour, salt and pepper and coat chicken. Brown in olive oil for 2 minutes each side. Remove and set aside.

In large skillet, add all ingredients except for chicken, lemon juice and corn starch. Bring to boil. Add chicken, cover and simmer until chicken is cooked through. Return to boil and add lemon juice and corn starch to thicken sauce.
