Easy Cheesy Mashed potatoes
8 oz cream cheese softened
1/2 cup sour cream
1/2 cup margarine softened
1/2 cup minced onion (optional)
Salt and pepper to taste
1 to 2 cups grated cheddar cheese (optional)

Directions:
Directions:
Prepare 8 to 12 servings of mashed potatoes (or use instant mashed according to package directions EXCEPT do not add margarine and ADD 1/2 cup extra potato flakes).
Set aside.
In large glass mixer bowl, combine cream cheese and margerine (microwave for 30 seconds if you forgot to soften). Add sour cream. Mix together with mixer. Stir in prepared potatoes. Pack into greased 2-1/2 quart casserole or 9 X 13 cake pan. Bake at 350 for 30-40 minutes. Remove from oven and sprinkle cheese on top if desired. Return to oven until cheese is melted. Serve with Chicken Jubilee.
